Ingredients

  • 2 cups old-fashioned oats

  • 1 large egg white
  • 1 large egg
  • cup skim milk
  • cup mashed bananas
  • ½ teaspoon vanilla extract
  • 6 tablespoons semi-sweet chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and lightly mist a standard muffin tin with cooking spray.
  2. 2. In a large bowl, combine the oats, brown sugar, baking powder, and salt, mixing thoroughly.
  3. 3. In a separate bowl, whisk together the egg whites, egg, mashed banana, milk, and vanilla.
  4. 4. Add the wet ingredients to the dry ingredients and stir until well blended.
  5. 5. Fold in the chocolate chips.
  6. 6. Spoon the oatmeal mixture evenly into the prepared muffin cups.
  7. 7. Bake uncovered for 20-22 minutes until lightly browned and a toothpick comes out clean.
