Ingredients

Wet Ingredients

  • ½ cup mashed banana
  • 2 large eggs
  • 1 tablespoon honey
  • 1 cup unsweetened almond milk
  • 1 tablespoon melted coconut oil

Dry Ingredients

  • 3 cups rolled oats
  • ½ cup ground oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 pint fresh raspberries
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350ºF and prepare a muffin tin with liners or nonstick spray.
  2. Mash the banana in a large bowl, then mix in the eggs, honey, and almond milk.
  3. Add the rolled oats, oat flour, baking powder, and cinnamon to the wet mixture and stir well.
  4. Partially mash the raspberries and fold them into the mixture along with the chocolate chips.
  5. Incorporate the melted coconut oil and mix again.
  6. Scoop the mixture into the muffin cups, filling them to the top.
  7. Bake for 19-21 minutes, then let cool for 10 minutes before removing from the tin.
