Instructions
- Preheat the oven to 350ºF and prepare a muffin tin with liners or nonstick spray.
- Mash the banana in a large bowl, then mix in the eggs, honey, and almond milk.
- Add the rolled oats, oat flour, baking powder, and cinnamon to the wet mixture and stir well.
- Partially mash the raspberries and fold them into the mixture along with the chocolate chips.
- Incorporate the melted coconut oil and mix again.
- Scoop the mixture into the muffin cups, filling them to the top.
- Bake for 19-21 minutes, then let cool for 10 minutes before removing from the tin.
