Ingredients

Wet Ingredients

  • 1 large mashed banana
  • 2 large eggs
  • 1 tablespoon honey
  • cup peanut butter
  • 1 cup plain, unsweetened almond milk
  • 1 tablespoon melted coconut oil

Dry Ingredients

  • 3 cups rolled oats
  • ½ cup ground oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • cup chocolate chips

Instructions

  1. Preheat the oven to 350ºF and spray a muffin tin with non-stick cooking spray.
  2. Mix all dry ingredients in a large bowl and set aside.
  3. In a separate bowl, whisk the eggs and add the wet ingredients except for the coconut oil.
  4. Combine the dry ingredients with the wet ingredients until mixed.
  5. Fold in the melted coconut oil.
  6. Scoop the batter into the muffin cups, filling them about ¾ full, and sprinkle with chocolate chips.
  7. Bake for 16-18 minutes, then sprinkle with sea salt.
  8. Let cool for 5 minutes before removing from the muffin tin.
