Instructions
- Preheat the oven to 350ºF and spray a muffin tin with non-stick cooking spray.
- Mix all dry ingredients in a large bowl and set aside.
- In a separate bowl, whisk the eggs and add the wet ingredients except for the coconut oil.
- Combine the dry ingredients with the wet ingredients until mixed.
- Fold in the melted coconut oil.
- Scoop the batter into the muffin cups, filling them about ¾ full, and sprinkle with chocolate chips.
- Bake for 16-18 minutes, then sprinkle with sea salt.
- Let cool for 5 minutes before removing from the muffin tin.
