Ingredients

The base

  • 3 small ripe bananas (mashed, about 1 cup)
  • 1 cup milk of choice
  • 2 large eggs
  • ½ cup natural salted peanut butter
  • ¼ cup pure maple syrup (or honey)
  • 1 tsp vanilla extract

The dry ingredients

  • 2 ½ cups old fashioned oats
  • cup cocoa powder
  • 2 tsp baking powder
  • ¼ tsp fine salt
  • cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with liners.
  2. Mash the bananas in a mixing bowl until you have 1 cup.
  3. Add the milk, eggs, peanut butter, maple syrup, and vanilla to the mashed bananas and whisk until combined.
  4. Stir in the oats, cocoa powder, baking powder, and salt until well mixed.
  5. Fold in the chocolate chips if using.
  6. Spoon the mixture into the muffin tin, filling each cup to the top.
  7. Bake for about 25 minutes until set.
  8. Allow to cool in the pan for at least 30 minutes before removing.
