No Bake Peanut Butter Oat Cups

Instructions
- Microwave peanut butter and maple syrup for 40-60 seconds and stir until combined.
- Gradually mix in oat flour until the mixture is thick and moldable.
- Prepare a muffin pan with liners or oil and scoop the mixture into it, pressing down firmly.
- Melt chocolate chips and coconut oil in the microwave in 30-second increments, stirring until smooth.
- Pour melted chocolate over the peanut butter mixture and smooth the top.
- Refrigerate for 2-3 hours to set, then remove from the pan and store in an airtight container.
