No Bake Peanut Butter Oat Cups

Ingredients

The base

  • cups peanut butter
  • cups oat flour
  • ¼ cup maple syrup

The topping

  • 1 cup chocolate chips
  • 1 tsp coconut oil (optional)

Instructions

  1. Microwave peanut butter and maple syrup for 40-60 seconds and stir until combined.
  2. Gradually mix in oat flour until the mixture is thick and moldable.
  3. Prepare a muffin pan with liners or oil and scoop the mixture into it, pressing down firmly.
  4. Melt chocolate chips and coconut oil in the microwave in 30-second increments, stirring until smooth.
  5. Pour melted chocolate over the peanut butter mixture and smooth the top.
  6. Refrigerate for 2-3 hours to set, then remove from the pan and store in an airtight container.
