Ingredients

The base

  • cups rolled oats
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 tsp baking powder

The wet ingredients

  • 1 large banana, mashed
  • ½ cup natural peanut butter
  • 1 large egg
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup almond milk

The toppings

  • ¾ cup mini chocolate chips
  • optional sliced banana for topping

Instructions

  1. Preheat the oven to 350°F and spray a muffin tin with non-stick spray.
  2. In a large bowl, mix the oats, cinnamon, salt, and baking powder.
  3. In a medium bowl, combine the mashed banana and peanut butter, then stir in the egg until well mixed.
  4. Add the maple syrup and vanilla to the banana mixture.
  5. Pour the wet ingredients into the oat mixture, then add the almond milk and chocolate chips, stirring until combined.
  6. Scoop the mixture into the muffin tin and top with additional chocolate chips.
  7. Bake for 25 minutes or until fully set, then cool before adding any additional toppings.
  8. Store in the fridge or freezer for later.
