Instructions
- Preheat the oven to 350°F and spray a muffin tin with non-stick spray.
- In a large bowl, mix the oats, cinnamon, salt, and baking powder.
- In a medium bowl, combine the mashed banana and peanut butter, then stir in the egg until well mixed.
- Add the maple syrup and vanilla to the banana mixture.
- Pour the wet ingredients into the oat mixture, then add the almond milk and chocolate chips, stirring until combined.
- Scoop the mixture into the muffin tin and top with additional chocolate chips.
- Bake for 25 minutes or until fully set, then cool before adding any additional toppings.
