Instructions
- Preheat the oven to 350°F and prepare a muffin tin.
- Roast the sliced strawberries on a baking sheet for 25 minutes and set aside.
- Mix ground flaxseed with water and let it sit to gel.
- In a large bowl, mash the bananas and mix in almond butter, almond milk, optional maple syrup, vanilla extract, and the flax mixture.
- Stir in oats, baking powder, cinnamon, and salt until combined.
- Fold in the roasted strawberries and chocolate chips.
- Spoon the mixture into the muffin cups, filling them to the top without pressing down.
- Top with additional chocolate chips and bake for 25 minutes.
- Allow to cool on a rack and store in an airtight container.
