Instructions
- 1. Preheat the oven to 375°F and prepare muffin tins with cooking spray or liners.
- 2. Mix chia seeds with water in a small bowl and let it sit until it gels.
- 3. In a large bowl, mash the bananas and ensure you have 1 cup.
- 4. Add grated zucchini, almond milk, vanilla extract, almond butter, maple syrup, and the chia mixture, stirring to combine.
- 5. Add oats, baking powder, cinnamon, salt, and any optional add-ins, stirring until just combined.
- 6. Spoon the mixture into muffin cups, filling them to the top.
- 7. Bake for 23-28 minutes until a fork comes out clean.
- 8. Cool on a wire rack and store in an airtight container.
