Ingredients

Wet ingredients

  • 1 cup mashed banana
  • 1 cup plain yogurt
  • 2 whole eggs
  • ¼ cup maple syrup
  • 3 Tbsp. butter, melted
  • 2 tsp. vanilla extract

Dry Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 tsp. ground cinnamon
  • 1 tsp. baking soda
  • ½ tsp. salt

Mix-in ingredients

  • ½ cup shredded zucchini
  • ½ cup mini chocolate chips
  • ½ cup chopped walnuts
  • ½ cup coconut flakes

Instructions

  1. Preheat the oven to 350ºF.
  2. Combine the wet ingredients in a bowl and mix well.
  3. In a large mixing bowl, combine the dry ingredients.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Let the mixture set for 10 minutes to allow the oats to soak up the wet ingredients.
  6. Fold in the mix-ins.
  7. Transfer the batter to a greased muffin pan, filling the wells to the top for 16 muffins.
  8. Bake for 23-25 minutes or until the tops are golden brown.
  9. Remove from the oven and let set for 5 minutes before transferring to a cooling rack.
  10. Serve warm or cold.
