Instructions
- Preheat the oven to 350ºF.
- Combine the wet ingredients in a bowl and mix well.
- In a large mixing bowl, combine the dry ingredients.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Let the mixture set for 10 minutes to allow the oats to soak up the wet ingredients.
- Fold in the mix-ins.
- Transfer the batter to a greased muffin pan, filling the wells to the top for 16 muffins.
- Bake for 23-25 minutes or until the tops are golden brown.
- Remove from the oven and let set for 5 minutes before transferring to a cooling rack.
- Serve warm or cold.
