Chocolate Chip Zucchini Baked Oatmeal

Ingredients

  • 2 pieces very overripe bananas
  • 2 cups grated zucchini or summer squash
  • ¼ cup milk of choice
  • cup salted peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups old fashioned oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp fine sea salt
  • cup chocolate chips or walnuts

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 inch baking dish.
  2. Mash the bananas in a mixing bowl and add the grated zucchini, milk, peanut butter, egg, and vanilla. Whisk until smooth.
  3. In a separate bowl, combine the oats, baking powder, cinnamon, and salt. Mix well.
  4. Fold the dry ingredients into the wet mixture and add the chocolate chips.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 40 minutes or until set. Allow to cool for at least 20 minutes before slicing.
