Chocolate Chip Zucchini Baked Oats

Ingredients

  • 2 tablespoons zucchini, grated and moisture squeezed out
  • ½ cup rolled or quick oats
  • ¼ cup milk of choice
  • 1 large egg (or substitute for a flax egg)
  • ½ ripe banana
  • 1 tablespoon maple syrup
  • 1 scoop collagen peptides or unflavored protein powder (optional)
  • 1 tablespoon almond butter or cashew butter
  • ¼ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • 3 tablespoons dairy-free chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Grease an oven-safe mug or 6-8 oz ramekin.
  3. Finely grate the zucchini and press out moisture with a paper towel.
  4. Blend all ingredients except zucchini and chocolate chips until smooth.
  5. Pour the oat mixture into the mug or ramekin.
  6. Stir in the zucchini and chocolate chips.
  7. Bake for 25 minutes.
  8. Remove from the oven and add a splash of milk if desired.
