Ingredients

The base

  • cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt

The wet ingredients

  • 1 large egg
  • ½ cup egg whites
  • ¼ cup natural peanut butter
  • 1 cup unsweetened vanilla almond milk
  • 1 tsp vanilla
  • 20 drops liquid stevia

The additions

  • 1 cup shredded zucchini
  • ¼ cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F and spray an 8x8 baking dish with nonstick spray.
  2. In a medium bowl, combine the oats, protein powder, cinnamon, nutmeg, baking powder, and salt.
  3. In a large bowl, whisk together the egg, egg whites, peanut butter, almond milk, vanilla, and stevia.
  4. Add the dry ingredients to the wet ingredients and stir until well combined.
  5. Fold in the shredded zucchini and chocolate chips, reserving 1 tablespoon of chocolate chips for topping.
  6. Bake in the oven for 32-35 minutes. Allow to cool before serving.
