Instructions
- Preheat the oven to 350°F and spray an 8x8 baking dish with nonstick spray.
- In a medium bowl, combine the oats, protein powder, cinnamon, nutmeg, baking powder, and salt.
- In a large bowl, whisk together the egg, egg whites, peanut butter, almond milk, vanilla, and stevia.
- Add the dry ingredients to the wet ingredients and stir until well combined.
- Fold in the shredded zucchini and chocolate chips, reserving 1 tablespoon of chocolate chips for topping.
- Bake in the oven for 32-35 minutes. Allow to cool before serving.
