Instructions
- Preheat the oven to 350°F and spray an 8x8 inch baking pan with nonstick cooking spray.
- Shred the zucchini and squeeze out excess moisture using a paper towel or cheese cloth.
- In a medium bowl, combine shredded zucchini, applesauce, eggs, almond milk, maple syrup, vanilla, and melted butter or coconut oil.
- Stir in the dry ingredients: oats, baking powder, cinnamon, allspice, ginger, nutmeg, and salt. Mix well.
- Fold in diced apples, raisins, and nuts if using.
- Spread the mixture into the prepared pan and top with thinly sliced apples if desired.
- Bake for 35-40 minutes until the edges are golden and the center is set.
- In a small bowl, mix together the yogurt, powdered sugar, almond milk, vanilla, and cinnamon for the glaze.
- Drizzle the glaze over the baked oatmeal before serving.
