Oatless Zucchini Oatmeal

Ingredients

The base

  • 85 g finely shredded zucchini or yellow squash
  • 50 g very ripe banana, mashed
  • ½ cup liquid egg whites
  • ½ cup almond milk

The mix-ins

  • 1 tbsp ground flaxseed
  • 1 tbsp vanilla protein powder
  • ½ tsp cinnamon

Instructions

  1. Mix the zucchini and mashed banana in a small bowl and set aside.
  2. Heat the egg whites and almond milk in a small saucepan over medium heat, whisking continuously.
  3. After a minute, add the flaxseed and protein powder, whisking together and cooking for 2-3 minutes until thickened.
  4. Stir in the zucchini and banana mixture and cook for another 2-3 minutes until thick.
  5. Add cinnamon, stir, and serve with desired toppings.
