Ingredients

The base

  • ½ cup rolled or quick oats
  • 1 tablespoon unsweetened cocoa powder
  • ¼ cup milk of choice
  • 1 large egg
  • ½ ripe banana
  • 1 tablespoon maple syrup
  • 1 scoop collagen peptides (optional)
  • 1 tablespoon cashew or almond butter
  • ¼ teaspoon baking powder
  • ¼ teaspoon cinnamon

The toppings

  • 3 tablespoons dairy-free chocolate chips
  • 2 tablespoons walnuts

Instructions

  1. Preheat your oven to 350°F.
  2. Grease an oven-safe mug or 6-8 oz ramekin.
  3. Blend all ingredients except for the chocolate chips and walnuts until smooth.
  4. Pour the oat mixture into the mug or ramekin.
  5. Top with walnuts and chocolate chips.
  6. Bake for 25 minutes.
  7. Remove from oven and add a splash of milk if desired.
