Ingredients

  • 1 cup shredded zucchini
  • 2 cups old-fashioned whole rolled oats
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter
  • ½ cup packed dark or light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tablespoon pure maple syrup
  • teaspoons pure vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Blot the shredded zucchini to remove excess moisture and set aside.
  2. Whisk together the oats, flour, baking soda, salt, and cinnamon in a bowl.
  3. Beat the softened butter and sugars until creamy, then add the egg, maple syrup, and vanilla.
  4. Combine the dry ingredients and zucchini with the wet mixture, then mix in the chocolate chips.
  5. Chill the dough in the refrigerator for at least 2 hours.
  6. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  7. Scoop the dough onto the sheets and bake for 13-14 minutes until lightly browned.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
