Instructions
- Blot the shredded zucchini to remove excess moisture and set aside.
- Whisk together the oats, flour, baking soda, salt, and cinnamon in a bowl.
- Beat the softened butter and sugars until creamy, then add the egg, maple syrup, and vanilla.
- Combine the dry ingredients and zucchini with the wet mixture, then mix in the chocolate chips.
- Chill the dough in the refrigerator for at least 2 hours.
- Preheat the oven to 350°F (177°C) and prepare baking sheets.
- Scoop the dough onto the sheets and bake for 13-14 minutes until lightly browned.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
