Instructions
- Shred the zucchini and let it sit to draw out moisture.
- Preheat the oven and prepare a baking sheet.
- In a bowl, mix the unsalted butter, light brown sugar, and maple syrup until combined.
- Add the egg, cashew butter, vanilla extract, and salt to the mixture and stir well.
- In another bowl, combine the quick-cooking oats, baking soda, and shredded zucchini.
- Combine both mixtures and fold in the chocolate chips.
- Scoop the dough onto the prepared baking sheet.
- Bake in the preheated oven until the cookies are set and lightly golden.
