Ingredients

  • 2 medium zucchini
  • ½ cup unsalted butter
  • ¾ cup light brown sugar
  • ¼ cup maple syrup
  • 1 large egg
  • ½ cup cashew butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups quick-cooking oats
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Shred the zucchini and let it sit to draw out moisture.
  2. Preheat the oven and prepare a baking sheet.
  3. In a bowl, mix the unsalted butter, light brown sugar, and maple syrup until combined.
  4. Add the egg, cashew butter, vanilla extract, and salt to the mixture and stir well.
  5. In another bowl, combine the quick-cooking oats, baking soda, and shredded zucchini.
  6. Combine both mixtures and fold in the chocolate chips.
  7. Scoop the dough onto the prepared baking sheet.
  8. Bake in the preheated oven until the cookies are set and lightly golden.
  9. Let the cookies cool before serving.
