Vegan Chocolate Chip Zucchini Breakfast Cookies

Ingredients

  • ¾ cup Zucchini, shredded
  • 1 medium-large Banana, very ripe
  • cup Peanut Butter
  • 1 cup Rolled Oats
  • ½ cup Oat Flour
  • 3 tablespoons Maple Syrup
  • 1 ½ teaspoons Vanilla Extract
  • 1 teaspoon Cinnamon
  • ½ teaspoon Baking Powder
  • ¾ cup Chocolate Chips
  • 1 pinch Flaky Sea Salt

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Grate the zucchini and remove moisture using a paper towel.
  3. In a bowl, combine the grated zucchini with the mashed banana.
  4. Add the remaining ingredients to the bowl and mix until a dough forms.
  5. Scoop the dough onto the prepared baking sheet to form 12-14 cookies.
  6. Sprinkle a pinch of flaky salt on each cookie.
  7. Bake for 12-14 minutes until soft.
  8. Let the cookies cool before enjoying.
