Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Grate the zucchini and remove moisture using a paper towel.
- In a bowl, combine the grated zucchini with the mashed banana.
- Add the remaining ingredients to the bowl and mix until a dough forms.
- Scoop the dough onto the prepared baking sheet to form 12-14 cookies.
- Sprinkle a pinch of flaky salt on each cookie.
- Bake for 12-14 minutes until soft.
- Let the cookies cool before enjoying.
