Lemon Baked Oatmeal Cups

Ingredients

  • 2 medium overripe bananas
  • ¾ cup milk (unsweetened almond milk)
  • ¼ cup cashew or almond butter
  • 1 large lemon (zest and juice)
  • 1 ½ tsp vanilla extract
  • 2 cups old-fashioned oats
  • ¼ cup chia seeds
  • ¼ cup coconut sugar (or sweetener of choice)
  • 1 ½ tsp baking powder
  • ½ tsp fine salt

Instructions

  1. Preheat the oven to 375°F and spray a muffin tin with cooking spray.
  2. In a large mixing bowl, mash the bananas with a fork.
  3. Add the milk, nut butter, lemon juice and zest, and vanilla to the mashed bananas and whisk until well combined.
  4. Stir in the oats, chia seeds, sugar, baking powder, and salt until combined.
  5. Spoon the batter evenly into the muffin tin.
  6. Bake for 20-25 minutes until set and lightly browned.
  7. Cool for 20 minutes on a cooling rack before removing from the muffin tin.
  8. Store in an airtight container in the refrigerator.
