Lemon Baked Oatmeal Cups

Instructions
- Preheat the oven to 375°F and spray a muffin tin with cooking spray.
- In a large mixing bowl, mash the bananas with a fork.
- Add the milk, nut butter, lemon juice and zest, and vanilla to the mashed bananas and whisk until well combined.
- Stir in the oats, chia seeds, sugar, baking powder, and salt until combined.
- Spoon the batter evenly into the muffin tin.
- Bake for 20-25 minutes until set and lightly browned.
- Cool for 20 minutes on a cooling rack before removing from the muffin tin.
- Store in an airtight container in the refrigerator.
