Ingredients

Wet Ingredients

  • 2 large eggs
  • 1 medium banana
  • 1 cup blueberries
  • ¾ cup unsweetened almond milk
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 tablespoon melted coconut oil

Dry Ingredients

  • 3 cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • a pinch salt

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with muffin liners, spraying with nonstick cooking spray.
  2. Blend the banana, blueberries, almond milk, and honey until pureed, then set aside.
  3. In a large bowl, combine rolled oats and baking powder, then add the pureed mixture and mix well.
  4. Incorporate the eggs, vanilla extract, lemon zest, and salt, mixing thoroughly.
  5. Add the melted coconut oil and mix again.
  6. Scoop about 2 tablespoons of the mixture into each muffin cup and bake for 19-21 minutes.
