Instructions
- Preheat the oven to 350ºF and line a muffin tin with muffin liners, spraying with nonstick cooking spray.
- Blend the banana, blueberries, almond milk, and honey until pureed, then set aside.
- In a large bowl, combine rolled oats and baking powder, then add the pureed mixture and mix well.
- Incorporate the eggs, vanilla extract, lemon zest, and salt, mixing thoroughly.
- Add the melted coconut oil and mix again.
- Scoop about 2 tablespoons of the mixture into each muffin cup and bake for 19-21 minutes.
