Instructions
- Preheat the oven to 350ºF and spray a muffin tin with non-stick coconut oil spray.
- Mash the ripe banana in a medium bowl, then whisk in the eggs, vanilla extract, honey, and almond milk until well combined.
- In a separate bowl, mix the rolled oats, oat flour, baking powder, cinnamon, and salt.
- Combine the wet ingredients with the dry ingredients, then add melted coconut oil and mix again. Finally, fold in the berries.
- Transfer the batter into the muffin tin, filling each cup to the top.
- Bake for 18-20 minutes at 350ºF.
- Let cool and store in an airtight container in the fridge or freezer.
