Instructions
- Preheat the oven to 350°F.
- Grease a muffin tin or use liners.
- In a large bowl, mix the oats, baking powder, cinnamon, and salt.
- In a medium bowl, whisk the eggs, almond milk, maple syrup, and vanilla.
- Add the wet ingredients to the dry and stir until combined.
- Gently fold in the blueberries and walnuts.
- Fill the muffin tin until each cup is full.
- Bake for 25-27 minutes.
- Leave in the tin for 10 minutes before transferring to a wire rack to cool completely.
- Store in the refrigerator for up to one week or freeze for up to six months.
