Ingredients

The oatmeal cups

  • 3 cups rolled oats
  • 1 tsp baking powder
  • ¾ tsp cinnamon
  • ¼ tsp salt
  • 2 large eggs
  • 1 cup milk of choice
  • ½ cup maple syrup
  • 1 tsp vanilla
  • 1 cup fresh blueberries
  • 1 cup chopped walnuts (optional)

The icing

  • 2 tbsp powdered sugar
  • splash N/A water until desired consistency

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a muffin tin or use liners.
  3. In a large bowl, mix the oats, baking powder, cinnamon, and salt.
  4. In a medium bowl, whisk the eggs, almond milk, maple syrup, and vanilla.
  5. Add the wet ingredients to the dry and stir until combined.
  6. Gently fold in the blueberries and walnuts.
  7. Fill the muffin tin until each cup is full.
  8. Bake for 25-27 minutes.
  9. Leave in the tin for 10 minutes before transferring to a wire rack to cool completely.
  10. Store in the refrigerator for up to one week or freeze for up to six months.
