Instructions
- Preheat the oven to 350°F and coat a muffin tin with cooking spray.
- In a large bowl, combine oats, baking powder, cinnamon, brown sugar, applesauce, milk, eggs, melted butter, and vanilla extract.
- Mix the ingredients until well blended.
- Spoon the mixture into the prepared muffin tin.
- Bake for 20-25 minutes until golden brown.
- Allow to cool in the tin for 5 minutes before transferring to a rack.
- Serve topped with maple syrup and berries if desired.
