Instructions
- Preheat the oven to 350°F (177°C) and prepare a muffin pan with nonstick spray.
- In a large bowl, whisk together all ingredients except for the apples, nuts, and coarse sugar.
- Fold in the chopped apples and nuts if using.
- Spoon the batter into the muffin cups, ensuring both liquid and solid ingredients are included, and fill to the top.
- If desired, sprinkle coarse sugar on top.
- Bake for 28-30 minutes until the edges are lightly browned and the tops are set.
- Cool for 5-10 minutes before serving.
