Ingredients

The base

  • 1 and ½ cups milk
  • 2 large eggs
  • ½ cup pure maple syrup
  • ½ cup unsweetened applesauce
  • 3 cups old-fashioned whole rolled oats
  • 1 teaspoon baking powder
  • 1 and ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon salt

The filling

  • 1 heaping cup peeled chopped apple

Optional toppings

  • ½ cup chopped walnuts or pecans
  • to taste coarse sugar

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a muffin pan with nonstick spray.
  2. In a large bowl, whisk together all ingredients except for the apples, nuts, and coarse sugar.
  3. Fold in the chopped apples and nuts if using.
  4. Spoon the batter into the muffin cups, ensuring both liquid and solid ingredients are included, and fill to the top.
  5. If desired, sprinkle coarse sugar on top.
  6. Bake for 28-30 minutes until the edges are lightly browned and the tops are set.
  7. Cool for 5-10 minutes before serving.
  8. Store leftovers in the refrigerator for up to a week.
