Ingredients

The oatmeal mixture

  • 2 cups old-fashioned oats
  • cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon cinnamon
  • ¼ teaspoon salt

The wet ingredients

  • 1 large egg white
  • 1 large egg
  • ¾ cup skim milk
  • cup unsweetened applesauce
  • ½ teaspoon vanilla extract

The fruit

  • cup peeled chopped fresh apples

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin by misting it with cooking spray.
  2. In a large bowl, mix the oats, brown sugar, baking powder, cinnamon, and salt until combined.
  3. In another bowl, whisk together the egg white, egg, applesauce, milk, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until well blended.
  5. Fold in the chopped apples.
  6. Spoon the mixture evenly into the prepared muffin cups.
  7. Bake for 20-22 minutes until lightly browned and a toothpick comes out clean.
