Ingredients

The base

  • 2 cups old fashioned oats
  • cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon

The wet ingredients

  • 1 large egg white
  • 1 large egg
  • cup skim milk
  • ½ cup unsweetened applesauce
  • ½ teaspoon vanilla extract

Add-ins

  • 3 tablespoons raisins
  • 3 tablespoons chopped pecans or walnuts

Instructions

  1. Preheat the oven to 350°F and lightly mist a muffin tin with cooking spray.
  2. In a large bowl, combine the oats, brown sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together the egg white, egg, milk, applesauce, and vanilla.
  4. Add the wet ingredients to the dry ingredients and mix until blended.
  5. Stir in the raisins and nuts.
  6. Spoon the mixture evenly into the prepared muffin cups.
  7. Bake for 20-24 minutes or until lightly browned and a toothpick comes out clean.
