Ingredients

The base

  • 2 cups old fashioned oats
  • cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

The wet ingredients

  • 1 egg white egg white
  • 1 large egg
  • cup skim milk
  • ½ cup unsweetened applesauce
  • ½ teaspoon vanilla extract

Add-ins

  • cup grated carrots
  • 2 tablespoons raisins

Instructions

  1. Preheat the oven to 350°F and lightly mist a muffin tin with cooking spray.
  2. In a large bowl, combine oats, brown sugar, baking powder, salt, cinnamon, nutmeg, and cloves, and mix well.
  3. In a separate bowl, whisk together the egg white, egg, applesauce, milk, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir until blended.
  5. Fold in the grated carrots and raisins.
  6. Spoon the mixture evenly into the prepared muffin cups.
  7. Bake uncovered for 20-24 minutes until lightly browned and a toothpick comes out clean.
