Ingredients

The base

  • 2 cups old-fashioned oats
  • ¼ cup ground flax seed
  • cup coconut sugar or organic brown sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp cinnamon
  • ¾ tsp ginger
  • ¼ tsp nutmeg
  • ¼ cup chopped walnuts or pecans
  • ½ tsp fine sea salt

The wet ingredients

  • 2 tbsp melted butter or coconut oil
  • 1 cup orange juice
  • ½ cup milk (unsweetened vanilla almond suggested)
  • 1 large egg
  • 1 cup freshly grated carrot

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 inch baking dish.
  2. In a large bowl, combine oats, flax, sugar, baking powder, cinnamon, ginger, nutmeg, walnuts, and salt.
  3. Melt the butter and whisk in the orange juice, milk, and egg.
  4. Stir the wet ingredients into the dry ingredients and fold in the grated carrot.
  5. Spoon the mixture into the baking dish and smooth it out.
  6. Bake for 45 minutes, then cool completely before slicing into bars.
