Instructions
- Preheat the oven to 350°F and grease an 8x8 inch baking dish.
- In a large bowl, combine oats, flax, sugar, baking powder, cinnamon, ginger, nutmeg, walnuts, and salt.
- Melt the butter and whisk in the orange juice, milk, and egg.
- Stir the wet ingredients into the dry ingredients and fold in the grated carrot.
- Spoon the mixture into the baking dish and smooth it out.
- Bake for 45 minutes, then cool completely before slicing into bars.
