Ingredients

The base

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp salt

The wet ingredients

  • cups almond milk
  • 2 large eggs
  • cup pure maple syrup
  • 2 tsp pure vanilla extract

The mix-ins

  • ¾ cup shredded carrots
  • ½ cup raisins
  • ½ cup chopped pecans

Instructions

  1. Preheat the oven to 375°F and grease an 8x8 casserole dish.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, ginger, and salt.
  3. In a medium bowl, combine the almond milk, eggs, maple syrup, and vanilla extract.
  4. Stir in the shredded carrots and half of the raisins and pecans into the wet mixture.
  5. Combine the wet mixture with the dry ingredients and stir until well mixed.
  6. Pour the mixture into the baking dish, pressing down to ensure the oats are soaked.
  7. Sprinkle the remaining raisins and pecans on top and press down lightly.
  8. Bake uncovered for 40-45 minutes until lightly golden brown.
  9. Let cool for 5 minutes before serving.
