Instructions
- Preheat the oven to 375°F and grease an 8x8 casserole dish.
- In a large bowl, mix the rolled oats, baking powder, cinnamon, ginger, and salt.
- In a medium bowl, combine the almond milk, eggs, maple syrup, and vanilla extract.
- Stir in the shredded carrots and half of the raisins and pecans into the wet mixture.
- Combine the wet mixture with the dry ingredients and stir until well mixed.
- Pour the mixture into the baking dish, pressing down to ensure the oats are soaked.
- Sprinkle the remaining raisins and pecans on top and press down lightly.
- Bake uncovered for 40-45 minutes until lightly golden brown.
- Let cool for 5 minutes before serving.
