Instructions
- Preheat the oven to 350°F and mist a 9×9 baking dish with cooking spray.
- In a mixing bowl, combine the oats, chia seeds, baking powder, salt, cinnamon, ginger, and nutmeg.
- Add the maple syrup, eggs, milk, vanilla, and melted butter to the dry ingredients and mix well.
- Fold in the shredded carrots, raisins, and walnuts.
- Pour the batter into the prepared baking dish and smooth the top. Optionally, top with additional chopped walnuts.
- Bake for 30-35 minutes until the center is set and a toothpick comes out clean.
- While baking, mix the icing ingredients until smooth, adjusting milk for desired consistency.
- Let the baked oatmeal cool for 15 minutes before icing and cutting into squares.
