Carrot Cake Oatmeal

Ingredients

The oatmeal

  • ¼ cup water
  • 1 cup fresh carrot juice
  • ½ cup gluten-free rolled oats
  • 2–3 Tablespoon raisins or golden raisins
  • ¼ – 1 cup grated fresh carrot (optional)
  • pinch cinnamon
  • pinch nutmeg
  • pinch ginger
  • pinch clove
  • pinch allspice
  • pinch turmeric
  • generous pinch salt

The garnish

  • 1-2 teaspoon maple syrup
  • 1 tablespoon toasted pumpkin seeds

Instructions

  1. Combine all ingredients except maple syrup and pumpkin seeds in a small pot.
  2. Bring to a boil over medium-low heat.
  3. Cover and simmer for about 5 minutes until the oats are tender.
  4. Serve in a bowl topped with maple syrup and pumpkin seeds.
