Ingredients

The oatmeal

  • 1 large carrot, grated
  • ½ tsp cinnamon
  • 1 ½ cup quick cook steel cut oats
  • 2 cup almond milk (or water)
  • ½ cup raisins
  • 3 tbsp maple syrup
  • ¼ cup chopped walnuts

Optional toppings

  • to taste nut butter of choice

Instructions

  1. Grate the carrot and set it aside.
  2. In a medium pot over low heat, combine the oats and almond milk or water.
  3. Bring the mixture to a gentle boil.
  4. Add the grated carrot, raisins, and maple syrup to the pot.
  5. Reduce the heat to low, cover, and cook for 5-7 minutes.
  6. Remove from heat and top with walnuts and any additional toppings.
