Ingredients

Baked Oats Base

  • ½ Cup Rolled Oats
  • ¼ Cup Carrots, finely shredded
  • ½ Cup Milk of Choice
  • 1 Teaspoon Vanilla Extract
  • 2 Tablespoons Maple Syrup
  • ½ Teaspoon Cinnamon
  • ½ Teaspoon Baking Powder
  • 1 Pinch Sea Salt

Optional Add-Ins

  • 1 Tablespoon Chopped Walnuts
  • 1 Tablespoon Raisins
  • 1-2 Tablespoons Protein Powder of Choice

Cream Cheese Filling

  • 2 Tablespoons Cream Cheese
  • 1 Teaspoon Maple Syrup
  • 2 Teaspoons Powdered Sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Blend the baked oats base ingredients until combined with some texture left.
  3. Grease a 3-4 inch ramekin with oil or butter.
  4. Pour about 3/4 of the baked oats batter into the ramekin.
  5. In a small bowl, mix cream cheese and maple syrup (or powdered sugar) to create the filling.
  6. Add a dollop of the cream cheese mixture into the ramekin with the baked oats.
  7. Pour the remaining baked oats mixture on top of the cream cheese filling.
  8. Bake in the oven for about 25 minutes, or until the top is golden.
  9. Allow to cool slightly before serving.
