Ingredients

The Oatmeal Mixture

  • 2 cups old fashioned oats
  • cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt

The Wet Ingredients

  • 1 large egg white
  • 1 large egg
  • cup skim milk
  • 1 5.3 oz container nonfat raspberry Greek yogurt
  • ½ teaspoon vanilla

The Fruits

  • ½ cup raspberries
  • ½ cup chopped peaches

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
  2. In a large bowl, mix the oats, brown sugar, baking powder, and salt.
  3. In another bowl, whisk together the egg white, egg, milk, yogurt, and vanilla.
  4. Combine the wet ingredients with the dry ingredients and mix well.
  5. Gently fold in the raspberries and peaches.
  6. Spoon the mixture evenly into the muffin cups.
  7. Bake for 22-25 minutes until lightly browned and a toothpick comes out clean.
