Baked Blueberry & Peach Oatmeal

can sliced peaches in water, drained and chopped

fresh or frozen blueberries

chopped pecans
Instructions
- Preheat the oven to 350°F.
- Combine oats, brown sugar, baking powder, and salt in a large bowl.
- In a separate bowl, whisk together egg whites, egg, applesauce, milk, and vanilla.
- Add the egg mixture to the dry ingredients and stir until blended.
- Let the mixture stand for 5 minutes, then add blueberries and peaches.
- Spray a 7” x 11” baking dish with cooking spray and pour the oatmeal mixture into the dish, spreading it evenly.
- Sprinkle pecans on top.
- Bake uncovered at 350°F for 35-40 minutes.
