Instructions
- Preheat the oven to 375°F and set an oven rack in the middle.
- Drain the peaches, reserving the juices, and place them in a baking dish.
- Add ¼ cup brown sugar and ¼ tsp cinnamon to the peaches, along with diced butter and ¼ tsp vanilla.
- In a large bowl, mix the oats with the remaining brown sugar, salt, and cinnamon.
- Combine 1 cup of peach juice with the cream, remaining vanilla, and beaten eggs, then mix with the oats.
- Dollop the oat mixture over the peaches, sprinkle with remaining butter, and garnish with peach slices.
- Bake for about 45 minutes until golden brown and crispy, then cool for 15 minutes before serving.
