Ingredients

The base

  • 3 cups old-fashioned oats
  • 2 15 oz cans sliced peaches in their juices
  • ½ cup heavy cream
  • 2 large eggs

The flavorings

  • ½ cup brown sugar
  • 1 pinch salt
  • ½ tsp vanilla extract
  • ½ tsp cinnamon

The fat

  • 8 Tbsp salted butter

Instructions

  1. Preheat the oven to 375°F and set an oven rack in the middle.
  2. Drain the peaches, reserving the juices, and place them in a baking dish.
  3. Add ¼ cup brown sugar and ¼ tsp cinnamon to the peaches, along with diced butter and ¼ tsp vanilla.
  4. In a large bowl, mix the oats with the remaining brown sugar, salt, and cinnamon.
  5. Combine 1 cup of peach juice with the cream, remaining vanilla, and beaten eggs, then mix with the oats.
  6. Dollop the oat mixture over the peaches, sprinkle with remaining butter, and garnish with peach slices.
  7. Bake for about 45 minutes until golden brown and crispy, then cool for 15 minutes before serving.
