Instructions
- Preheat the oven to 375°F and grease an 8×8 casserole dish.
- In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
- In a medium bowl, stir together the almond milk, eggs, maple syrup, and vanilla.
- Combine the wet mixture with the dry mixture and stir until well mixed.
- Fold in the diced peaches, chopped pecans, and white chocolate chips.
- Pour the mixture into the baking dish and press down to ensure the oats are soaked.
- Bake uncovered for 40-45 minutes until lightly golden brown.
- Let cool for 5 minutes before serving.
