Ingredients

The base

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt

The wet ingredients

  • cups almond milk
  • 2 units eggs
  • cup pure maple syrup
  • 1 tsp pure vanilla extract

The mix-ins

  • 2 medium peaches, diced small
  • ½ cup chopped pecans
  • ½ cup white chocolate chips

Instructions

  1. Preheat the oven to 375°F and grease an 8×8 casserole dish.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
  3. In a medium bowl, stir together the almond milk, eggs, maple syrup, and vanilla.
  4. Combine the wet mixture with the dry mixture and stir until well mixed.
  5. Fold in the diced peaches, chopped pecans, and white chocolate chips.
  6. Pour the mixture into the baking dish and press down to ensure the oats are soaked.
  7. Bake uncovered for 40-45 minutes until lightly golden brown.
  8. Let cool for 5 minutes before serving.
