Easy Peach Baked Oatmeal

Ingredients

  • cup Melted Butter
  • 1 15 oz can Sliced Peaches
  • 2 Eggs
  • ½ cup Brown Sugar, packed
  • 1 ½ tsp Baking Powder
  • ¼ tsp Salt
  • 1 ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • 1 ½ tsp Vanilla Extract
  • ¼ tsp Almond Extract
  • ¼ cup Real Maple Syrup
  • ½ cup Milk
  • 3 cups Old Fashioned Oats (not quick cooking)

Instructions

  1. Preheat the oven to 375°F and grease an 8"x8" baking dish.
  2. Melt the butter and allow it to cool slightly.
  3. Drain ½ cup of liquid from the canned peaches and set aside the remaining peaches and liquid.
  4. In a large bowl, beat the eggs and mix in the brown sugar, baking powder, salt, cinnamon, nutmeg, vanilla extract, almond extract, and maple syrup.
  5. Stir in the cooled melted butter, oats, and milk until well combined.
  6. Add the peaches and their remaining liquid to the mixture and stir gently.
  7. Pour the mixture into the prepared baking dish and pat it down gently.
  8. Bake for 20 to 30 minutes, or until the center is set.
  9. Serve warm with cream or milk.
