Ingredients

The fruit

  • 2 medium peaches
  • ½ cup blueberries

The wet ingredients

  • cups milk
  • 1 cup plain yogurt
  • 1 large egg
  • ¼ cup brown sugar

The dry ingredients

  • 2 cups old-fashioned oats
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground ginger
  • ¼ teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. Clean and chop the peaches, then place them along with the blueberries in an 8x8 baking dish coated with non-stick spray.
  3. In a bowl, whisk together the wet ingredients: milk, yogurt, egg, and brown sugar.
  4. In another bowl, mix the dry ingredients: oats, baking powder, baking soda, salt, ginger, and cinnamon.
  5. Combine the wet and dry mixtures, stirring until evenly mixed.
  6. Pour the mixture over the fruit in the baking dish.
  7. Cover the dish with foil and bake for 20 minutes.
  8. Remove the foil and continue baking for about 25 minutes until the top is golden brown.
  9. Serve warm, optionally with milk, whipped cream, or yogurt.
