Instructions
- Preheat the oven to 350°F.
- Clean and chop the peaches, then place them along with the blueberries in an 8x8 baking dish coated with non-stick spray.
- In a bowl, whisk together the wet ingredients: milk, yogurt, egg, and brown sugar.
- In another bowl, mix the dry ingredients: oats, baking powder, baking soda, salt, ginger, and cinnamon.
- Combine the wet and dry mixtures, stirring until evenly mixed.
- Pour the mixture over the fruit in the baking dish.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and continue baking for about 25 minutes until the top is golden brown.
- Serve warm, optionally with milk, whipped cream, or yogurt.
