Instructions
- Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
- In a bowl, combine oats, brown sugar, PB2, baking powder, and salt.
- In another bowl, whisk together the egg, egg white, milk, and applesauce.
- Mix the wet ingredients into the dry ingredients until combined, then fold in the raspberries.
- Spoon the mixture into the muffin tin and microwave the preserves for 30 seconds before drizzling on top.
- Bake for 20-24 minutes until lightly browned and a toothpick comes out clean.
- Cool in the tin for at least 10 minutes before transferring to a cooling rack.
