Ingredients

The oatmeal mixture

  • 2 cups old-fashioned oats
  • 3 tablespoons unsweetened cocoa powder
  • cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt

The wet ingredients

  • 1 large egg white
  • 1 large egg
  • ¾ cup skim milk
  • 1 container (5.3 oz) nonfat Cherry flavored Greek Yogurt
  • ½ teaspoon vanilla extract

The mix-ins

  • ¼ cup mini chocolate chips
  • cup pitted & chopped sweet cherries

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin by lightly misting it with cooking spray.
  2. In a large bowl, mix the oats, cocoa powder, brown sugar, baking powder, and salt.
  3. In another bowl, whisk together the egg whites, egg, milk, yogurt, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until well blended.
  5. Fold in the mini chocolate chips and chopped cherries.
  6. Spoon the mixture evenly into the muffin cups.
  7. Bake for 18-22 minutes until cooked through and a toothpick comes out clean.
