Instructions
- Preheat the oven to 350°F and prepare a muffin tin by lightly misting it with cooking spray.
- In a large bowl, mix the oats, cocoa powder, brown sugar, baking powder, and salt.
- In another bowl, whisk together the egg whites, egg, milk, yogurt, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until well blended.
- Fold in the mini chocolate chips and chopped cherries.
- Spoon the mixture evenly into the muffin cups.
- Bake for 18-22 minutes until cooked through and a toothpick comes out clean.
