Ingredients

The Oatmeal Mixture

  • 2 cups old fashioned oats
  • ¼ cup packed brown sugar
  • 3 tablespoons unsweetened cocoa powder
  • 2 teaspoons instant espresso powder
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt

The Wet Ingredients

  • 1 large egg
  • 1 large egg white
  • cup unsweetened vanilla almond milk
  • cup unsweetened applesauce

The Chocolate Chips

  • 6 tablespoons semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin by lightly misting 12 cups with cooking spray.
  2. In a large bowl, combine oats, brown sugar, cocoa powder, espresso powder, baking powder, and salt, stirring until mixed.
  3. In a separate bowl, whisk together the egg white, egg, almond milk, and applesauce until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until blended, then fold in the chocolate chips.
  5. Spoon the mixture evenly into the prepared muffin cups.
  6. Bake for 20-22 minutes until lightly browned and a toothpick comes out clean.
  7. Allow to cool for 10 minutes before removing from the muffin tin.
