Instructions
- Preheat the oven to 350°F and prepare a muffin tin by lightly misting 12 cups with cooking spray.
- In a large bowl, combine oats, brown sugar, cocoa powder, espresso powder, baking powder, and salt, stirring until mixed.
- In a separate bowl, whisk together the egg white, egg, almond milk, and applesauce until smooth.
- Add the wet ingredients to the dry ingredients and stir until blended, then fold in the chocolate chips.
- Spoon the mixture evenly into the prepared muffin cups.
- Bake for 20-22 minutes until lightly browned and a toothpick comes out clean.
- Allow to cool for 10 minutes before removing from the muffin tin.
