Ingredients

  • 1 1/4 cups rolled oats
  • 2/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup coconut oil
  • 1/4 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 180C/350F and line an 8-inch square pan.
  2. In a large mixing bowl, combine the oats, cocoa powder, and salt.
  3. In a separate bowl, whisk together the eggs, melted coconut oil, applesauce, and maple syrup.
  4. Combine the wet and dry ingredients until mixed, then fold in the chocolate chips.
  5. Pour the batter into the prepared pan and bake for 15-20 minutes until a toothpick comes out clean.
  6. Let the baked oatmeal cool completely before slicing and serving.
