Instructions
- Preheat the oven to 350°F and grease a 9 x 13 inch pan.
- In a small bowl, combine the gluten-free flour, cocoa powder, and salt, then set aside.
- Melt the unsweetened chocolate and coconut oil together, then let cool slightly.
- Boil 2 cups of water in a small saucepan and simmer the dates for about 3 minutes to soften them.
- In a food processor or blender, puree the softened dates, banana, and 2 tablespoons of the date water.
- In a large bowl, mix the maple syrup, eggs, and vanilla extract. Then add the pureed dates, banana, melted chocolate, and coconut oil, stirring to combine.
- Add the dry ingredients to the wet ingredients and mix well.
- Transfer the batter to the prepared baking pan.
- Bake for 25 minutes or until a toothpick inserted in the center comes out almost clean.
