Ingredients

  • 1 ¼ cups gluten-free flour
  • ¼ cup cocoa powder
  • ½ tsp salt
  • 6 ounces unsweetened chocolate
  • cup coconut oil
  • 3 pieces Medjool dates
  • ½ piece ripe banana
  • 1 cup maple syrup
  • 4 pieces eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9 x 13 inch pan.
  2. In a small bowl, combine the gluten-free flour, cocoa powder, and salt, then set aside.
  3. Melt the unsweetened chocolate and coconut oil together, then let cool slightly.
  4. Boil 2 cups of water in a small saucepan and simmer the dates for about 3 minutes to soften them.
  5. In a food processor or blender, puree the softened dates, banana, and 2 tablespoons of the date water.
  6. In a large bowl, mix the maple syrup, eggs, and vanilla extract. Then add the pureed dates, banana, melted chocolate, and coconut oil, stirring to combine.
  7. Add the dry ingredients to the wet ingredients and mix well.
  8. Transfer the batter to the prepared baking pan.
  9. Bake for 25 minutes or until a toothpick inserted in the center comes out almost clean.
