Ingredients

  • 1 cup + 2 Tbsp super fine almond flour
  • ½ cup unsweetened cocoa powder
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 1 cup pitted Medjool dates
  • ¼ cup honey
  • ¼ cup coconut oil, melted
  • 2 tsp vanilla extract
  • 2 large eggs
  • ¼ cup mini semi-sweet chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 inch baking dish with coconut oil.
  2. Combine almond flour, cocoa powder, salt, baking powder, dates, honey, coconut oil, and vanilla in a food processor and blend until smooth.
  3. Add one egg and pulse to blend, then repeat with the second egg. Stir in chocolate chips with a spatula.
  4. Spread the mixture evenly in the prepared baking dish.
  5. Bake for 20-25 minutes until set, checking with a toothpick.
  6. Allow to cool for about 5 minutes before cutting and serving.
