Ingredients

Wet Ingredients

  • ½ cup beet puree
  • cup pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips, melted

Dry Ingredients

  • ¼ cup dark chocolate chips, for topping
  • 1 cup super fine almond flour
  • 2 tablespoons coconut flour
  • cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 350ºF and prepare an 8x8-inch pan.
  2. Mix all dry ingredients (except chocolate chips) in a medium bowl.
  3. Prepare beet puree by processing cooked beets until smooth.
  4. In a separate bowl, mix wet ingredients except for half of the melted chocolate chips.
  5. Combine dry ingredients with wet ingredients and mix well.
  6. Melt the remaining chocolate chips in the microwave and fold into the batter.
  7. Pour the batter into the prepared pan and top with additional chocolate chips.
  8. Bake for 18-21 minutes, depending on desired gooeyness.
