Instructions
- Preheat the oven to 350ºF and prepare an 8x8-inch pan.
- Mix all dry ingredients (except chocolate chips) in a medium bowl.
- Prepare beet puree by processing cooked beets until smooth.
- In a separate bowl, mix wet ingredients except for half of the melted chocolate chips.
- Combine dry ingredients with wet ingredients and mix well.
- Melt the remaining chocolate chips in the microwave and fold into the batter.
- Pour the batter into the prepared pan and top with additional chocolate chips.
- Bake for 18-21 minutes, depending on desired gooeyness.
