Ingredients

The batter

  • ½ cup oat flour
  • cups cocoa powder
  • ¼ teaspoon salt
  • ½ cup peanut butter
  • ¾ cup coconut oil
  • cup maple syrup
  • 1 cup granulated sweetener
  • 4 large eggs

Optional ingredients

  • 1-2 cups chocolate chips

Instructions

  1. Preheat the oven to 180C/350F and line an 8x8-inch baking dish with parchment paper.
  2. In a small bowl, mix oat flour, cocoa powder, and salt.
  3. In another bowl, whisk together peanut butter, maple syrup, coconut oil, and sweetener until glossy. Add eggs and whisk well.
  4. Combine the wet and dry ingredients until just combined. Fold in chocolate chips if using.
  5. Transfer the batter to the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let the brownies cool completely in the pan before slicing.
