Instructions
- Preheat the oven to 350°F and grease an 8x8 pan.
- In a large bowl, mix together the rolled oats, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk together the eggs, almond milk, maple syrup, coconut oil, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until well combined.
- Fold in the chocolate chips, then pour the mixture into the greased baking dish and sprinkle extra chocolate chips on top.
- Bake for 45-50 minutes or until the mixture is set. Let cool for 10 minutes before serving.
- Top with optional toppings as desired and enjoy!
