Ingredients

The base

  • 2 cups rolled oats
  • cup cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • cup maple syrup
  • ¼ cup coconut oil
  • cups almond milk
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Optional toppings

  • to taste peanut butter
  • to taste whipped cream
  • to taste maple syrup
  • to taste nuts

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 pan.
  2. In a large bowl, mix together the rolled oats, cocoa powder, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, almond milk, maple syrup, coconut oil, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until well combined.
  5. Fold in the chocolate chips, then pour the mixture into the greased baking dish and sprinkle extra chocolate chips on top.
  6. Bake for 45-50 minutes or until the mixture is set. Let cool for 10 minutes before serving.
  7. Top with optional toppings as desired and enjoy!
