Ingredients

The oatmeal mixture

  • 2 cups old fashioned oats
  • cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt

The wet ingredients

  • 1 large egg white
  • 1 large egg
  • ¾ cup skim milk
  • ½ cup canned pumpkin
  • ½ teaspoon vanilla extract

The chocolate

  • cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin by lightly misting it with cooking spray.
  2. In a large bowl, mix together the oats, brown sugar, baking powder, pumpkin pie spice, and salt.
  3. In another bowl, whisk together the egg white, egg, pumpkin, milk, and vanilla.
  4. Combine the wet ingredients with the dry ingredients and stir until well blended.
  5. Fold in the chocolate chips.
  6. Spoon the mixture evenly into the muffin cups.
  7. Bake for 18-22 minutes until lightly browned and a toothpick comes out clean.
