Instructions
- Preheat the oven to 350°F (177°C) and prepare a muffin pan with nonstick spray.
- In a large bowl, whisk together all the base ingredients except for the optional add-ins and coarse sugar.
- Fold in the optional add-ins if using.
- Spoon the batter evenly into the muffin cups, filling them to the top.
- Sprinkle coarse sugar on top if desired.
- Bake for 28-30 minutes until the edges are lightly browned and tops appear set.
- Cool for 5-10 minutes before serving.
